Ideal lunch suggestion: Make creamy mushroom risotto

Date:

If you're looking for a delicious and creamy lunch idea that's not too complicated to prepare, mushroom risotto is a great choice.

The combination of aromatic mushrooms, creamy Parmesan, and rice cooked in broth gives the dish a rich flavor and texture that is hard to resist.

Ingredients:

  • 1 liter of beef broth
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 400 g mixed mushrooms
  • 1 medium onion
  • 1 clove garlic
  • 200 g of Arborio rice
  • 150 ml dry white wine
  • 40 g grated Parmesan
  • 1 tablespoon chopped parsley
  • salt to taste
  • black pepper to taste

Preparation:

First, heat the soup over low heat and keep it warm while preparing the risotto.

In a large frying pan, heat half the butter and olive oil. Add the sliced mushrooms, season with salt and pepper and fry for four to five minutes, until they are golden brown and the liquid they have released has evaporated. Remove the cooked mushrooms from the pan and set aside.

Add the remaining butter and olive oil to the same pan, then add the finely chopped onion and garlic. Sauté briefly until the onion softens and becomes translucent.

Add the Arborio rice and mix well. Fry for a few minutes or until the grains are glassy. Then add the white wine and cook until the rice has almost completely absorbed it.

Then start gradually adding the hot stock. Pour it in small amounts, about half a cup at a time, stirring constantly and gently. Wait for the rice to absorb the added liquid before adding more stock. Repeat the process until the rice is cooked but still firm to the bite.

When the rice is done, return the mushrooms to the pan and add the grated Parmesan. Mix everything well to combine the ingredients and give the risotto its characteristic creamy texture. Add more salt and pepper if necessary.

Serve the risotto immediately, while it is warm and creamy, and sprinkle with chopped parsley and additional grated Parmesan before serving.
