The Spanish tortilla is a traditional dish made from eggs, potatoes, and onions, all lightly fried in olive oil. It is soft on the inside and lightly browned on the outside, giving it a distinctive texture and rich flavor. It can be served hot or cold, as a main course or snack.
Required:
- 4 large potatoes
- 1 large onion
- 4 eggs
- 4 tablespoons olive oil

Preparation: Peel the potatoes and cut them into thin slices, and the onion into thin crescents. Heat the olive oil in a large frying pan and add the potatoes and onions. Fry over low heat for about fifteen minutes, stirring occasionally, until the potatoes are soft and lightly browned. Reduce the heat if necessary to prevent the ingredients from burning too much. Beat the eggs in a bowl and season with salt and pepper. When the potatoes and onions are done, drain off the excess oil and add them to the eggs. Let the mixture set for a few minutes, then return it to the pan and fry over low heat for 8 to 10 minutes. When the bottom side is golden brown, carefully turn the tortilla onto a large plate and fry for a few more minutes on the other side. Serve hot or cold, as a meal on its own, as a side dish, or as a light meal with a fresh salad.
