Ingredients:
300 g of rice
200 g tuna in oil (drained)
150 g tomatoes
150 g of diced cheese
100 g peas
1 red pepper
1 yellow pepper
pitted olives
100 g pickles
a little spring onion (optional)
salt to taste

Preparation:
Cook the peas briefly in a pot of boiling water for about 3 to 4 minutes, then remove and set aside.
Add the rice to the same water. Once cooked, drain and rinse with cold water to prevent further softening.
Cut the peppers, cheese, pickles and peeled tomatoes into small cubes. Chop the olives as desired. Place all the vegetables in a large bowl, add a little salt and olive oil, then mix well. Then add the cooled rice, drained tuna and finely chopped spring onions, if desired. Gently mix everything and serve as a light and tasty meal.
