Mexican moussaka with tortillas

Date:

Arrange the ingredients in several thin layers so that the flavors blend evenly during baking.

Required:

  • 500 g minced beef
  • 5-6 tortillas
  • 1 onion
  • 2 cloves garlic
  • 150 g canned corn
  • 100 g peas
  • 1 red pepper
  • 400 g tomato peels
  • 250 g yellow cheese
  • 2 tablespoons oil
  • 1 teaspoon ground red pepper
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Parsley as desired

Preparation: Heat the oil and fry the finely chopped onion and garlic. Add the minced meat and fry until it changes color, then stir in the pepper, corn, peas, tomatoes and spices. Cook for ten minutes, stirring occasionally, until the sauce thickens slightly. Line the bottom of the baking dish with tortillas, spread some of the filling and sprinkle with grated cheese. Repeat the layering until you have used up the ingredients and finish with a layer of cheese. Bake for about 30 minutes at 190 degrees. Let the dish stand for ten minutes, then sprinkle with chopped parsley and serve.
